Dandelion Root Muffins


¾ Cup milk or non-dairy milk

1 TB of dandelion root powder (can grind in coffee grinder or use tea bag if powder not available)

3 cups flour

½ tsp baking soda

½ tsp baking powder

1 tsp cinnamon

½ tsp salt

½ cup of softened coconut oil or butter

3 eggs

½ cup chopped pecans


Mix oil/butter, eggs and sugar. In a separate bowl mix dry ingredients. Mix all together and bake 350 degrees 20-25 min.
